Honey from
a fruit
Around September, the fruit’s color turns to dark brown, and it drops from the tree. It has to be collected as soon as possible, and preserved in a dry environment. We then break it in small pieces and let those soak into water to collect all its substances. The water is then boiled on low heat for many hours, in order to preserve its taste and all of its therapeutic properties. As it evaporates, the texture becomes honey like, thus our Carob Honey.
